MAIN DISHESMocha Mushroom Quiche by Sylvain Touati Ingredients: Dough:
Preheat oven to 350 degrees. 1. To make the pastry sift the flour into a bowl and cut in the butter and shortening until the mixture resembles bread crumbs. 2. Mix in enough water to make a firm dough. 3. Leave to rest in the refrigerator for 30 minutes. 4. Melt the butter in a frying pan and saute until soft. 5. Add potatoes and fry, stirring for 1 minute 6. Remove from the heat and allow to cool. 7. Roll out the pastry dough thinly and line a 8" quiche pan. 8. Spread the mushroom & potato mixture in the quiche pan and sprinkle with the scallions. 9. Beat the eggs with yogurt, cream and coffee. Salt & Pepper to taste. 10. Pour the mixture over the mushrooms and potatoes. 11. Bake in preheated oven for 45 minutes. Serve warm or cool. Serves 6-8 Trout Cafe by Sylvain Touati Ingredients:
Preheat oven to 350 degrees. 1. Season the trout with salt & pepper. Place in shallow gratin dish in one layer. 2. Cover with coffee. 3. Bake in preheated oven for 30 minutes. 4. Pour off 1 1/4 cups of the cooking liquid and reserve. 5. Melt the butter in a small saucepan. 6. Stir in the flour and cook for one minute. 7. Add the reserved cooking liquid, cream and milk. Bring to a boil, stirring well. 8. Serve the sauce with the fish. Serves 4. DESSERTSCoffee Cream Caramel by Sylvain Touati Ingredients:
Preheat oven to 300 degrees. 1. Place 1 1/4 cup of the sugar in a saucepan and melt over low heat, stirring constantly with a wooden spoon. 2. When the sugar is a pale brown in color, quickly and carefully stir in one tablespoon of the black coffee. 3. Pour into 2 1/2 cup baking dish. 4. Whisk together milk, eggs, remaining coffee and sugar. Strain into the dish. 5. Place the dish in a roasting pan and add enough hot water to come up half the sides of the dish (double boiler). 6. Bake for 1 hour and cool. 7. Serve with whipped cream and nutmeg. Coffee Chocolate Pumpkin Truffles Ingredients:
In medium bowl, combine vanilla wafer crumbs, ground almonds, the 1/2 cup powdered sugar, and cinnamon. Blend in chocolate, pumpkin, and coffee. Form into 1-inch balls. Chill. Dust with remaining powdered sugar just before serving. Makes 2 dozen truffles DrinksIrish Kiss Ingredients:
Brew coffee as normal, add Kahlua and Bailey's. Top with whipped cream. Hot Buttered Coffee Ingredients:
Place butter in mug and then add hot coffee. Add brown sugar and stir well. Finally, add the clove, rum and sprinkle nutmeg on top Coffee Alexander Ingredients:
Mix all ingredients in blender until smooth. Top with whipped cream and dark chocolate shavings |
